Yesterday and today I did something I haven't done in a long time: make masala chai! (Masala = spices, chai = tea)

Making masala chai is heavily based on personal preference, but if you'd like a starting template, you can try this:

SUPPLIES: small pot, water, milk, black tea, fine sieve, sugar, dry spices**

1) Add equal parts water and milk (let's say 2 cups water, 2 cups milk) to a pot

2) Add dry spices** to liquid

3) Add 2-3 Tbsp of sugar, a pinch of salt, and a pinch of black pepper or peppercorns

4) Heat to simmer, stirring occasionally

5) Add 2 heaping Tbsp black tea (or toss in 3-4 teabags)

6) Steep for at least 3 minutes

7) Strain through fine sieve and serve

**Dry spices can be any combination of the following. Start with half tsp of each and adjust by your taste. Cinnamon, nutmeg, cloves, fennel, cardamom, star anise, ginger.

(I personally like to use cinnamon, nutmeg, cardamom, and ginger. Lots of ginger to make it nice and spicy. Some extra black pepper too. :))

@1ofthesarahs that's part of the reason I make it so infrequently... I don't buy milk very often! or if I do, it's in very small quantities.
