I forgot to add done pics. This was flipping delicious. I held it a little over 180° for a couple hours, because I wanted to slice it rather than pull it.
I need a Carolina vinegar style sauce for the meat, and a compound sage cinnamon brown sugar butter for the sweet potato. Bok choy picked from my garden today sauteed in garlic chili oil.

Just under 7 hours. Stalled in low 170s, wrapping.

A little over 3 hours in, just did the apple cider vinegar spritz.

You're going to love it. I'm assuming you have an espresso machine, but what's your brew method for the others?

This is also my first time using the Temp Spike probe. It's very similar to the Meater probes. The estimated time left reported from the app keeps jumping all over the place, so I'm ignoring it. I'm planning on about 10 hours.

This will be a first for me. Doing my usual snake/fuse method on my Weber kettle with pecan wood. Salt & pepper rub only; letting the smoke provide the flavor.

Sides will be sweet potatoes hasselback style basted with cinnamon brown sugar sage butter, along with garlic and chili oil sauteed bok choy from the garden.

The nice thing about that Rockwell system is you get to play around with your preferred blade exposure without buying an entire new head.

The Rockwell is a huge upgrade in quality from what you were using, as are the those scary sharp Japanese Feather blades.

For me, I prefer slant razors, particularly the "twisted" type. It's a much different feel. My preferred razor for years has been an iKon X3, and after trying many different blades, I settled on PolSilver Super Iridium.

I won't get into brushes and soaps unless you ask.

I'm not a Swiftie at all, but I found this video months back and really enjoyed the performance.

Sadly, this is one of the only ways you get to hear what her voice really sounds like, because her vocals on her albums are all pitch corrected (like most modern pop artists).

I wish they wouldn't do this to people like TS who really don't need it at all. The human voice isn't meant to be perfectly in tune or on time.
