@CinnamonGirlE: A lot of folks, including Southerners, say it's African-American Soul Food, but I have never known many who said they did anything but want to vomit in re: chitlins.
There are chitlins festivals, yes, but they are uncommon and for good reason.
All that said, I have never, ever understood the appeal of okra, and I've had it made all kinds of ways by all kinds of people. It's okay sometimes in stews, but that's it for me. My paternal grandparents loved the stuff.
Also, pimento cheese is nomilicious.

@CinnamonGirlE: Chitlins are *not* a Southern staple food, not by a long shot. They are a niche food in the South and only in some areas.
Frog legs are fairly recently to being anywhere near the Southern food mainstream. I knew/know several Southern restaurant and diner owners who brought them out *after* the things picked up popularity after being on Food Network TV a few times. They were often limited to the Gulf Coast and the marshlands and low-country areas.
The rest of them, yes.
