Apparently Micro$oft decided that it would install 11 on my laptop whether I wanted it to or not, & I've just spent the last half hour re-enabling all the tweaks that I didn't want to lose.

4 biggies:

Where the icons are in the taskbar (NOT the dock!)/get rid of Search box & widget popup thingy

Start menu. Ugh. Trash all the unwanted crap

Compact view on folder view - why all the space??

Trash the Show More Option on the rt-clk menu. It hid all my extended shortcuts!
