This is pink, but maybe it will make the CoSo meter green this morning?

Prickly pear gluten free sourdough bread. Proof and 1st rise.

(it is still very pink, but ambient light is warmer this morning)

Here is the recipe I started from. Any mishaps from use of my Gluten Free starter and King Arthur Flour measure for meadure flour will be all my own.

Nearly ready for oven after 3 hours (I would let it rise another 2 hours but I have deadlines today).

Fresh from the oven, very pink! Time to get some whipped cream cheese for when this GF prickly pear sourdough cools.

At long last. Delicious. Texture is astounding, a true sourdough texture in a gluten free bread. πŸ†

@Vanitas Lovely! First, I'm going to try regular sourdough (per advise of Darling Daughter), then, this is up on the list! Thank you for the recipe. Going to get some lunch now.
