The new way I cook an omelet: preheat pan to med-hot and add butter and a little EVO, separate egg whites, whip egg whites in bowl to soft peaks, mix Sriracha and Worchestershire into yolks, and whip together in bowl. Pour into pan, lower heat and cover. Cook undisturbed for 3-4 minutes, or until it lifts easily. Fold gently in half and transfer to plate. HUGE DELICATE FLUFFY OMELET.
