@NaomiSkarzinski Love love love my stick blender for emulsifying. I'm not sure I've ever had a failed emulsification with it.

That said, I think that's also because when I went hunting for a cheapo one years ago I remember Alton Brown (?) saying something about the best ones for emulsification are the kind with a deep U-shaped cup vs the less suction-capable shallow V-shaped cups.
