Happy New Year CoSo! Here’s hoping for a great year to come….and I’m sure it’ll come with a few bumps in the road BUT, it’s those bumps that keep us going! So keep on keeping on!

It’s almost January and I’m sitting in my house with windows open as it’s 51 degrees out in NYC right now. Smh

Sometimes the firehose is sad to skim through. I wish I could help everyone. I know life sucks at times and everyone needs to vent. But I truly hope that they can find some happiness. 2024 is going to be a bumpy ride. Hold on. It’ll be ok just take one day at a time.

I totally messed up with labeling this. There is no eggnog mousse (that’s a different dessert lol ). This is a vanilla bean cheesecake with cranberry jam and white chocolate mousse.

Here’s the final look at my vanilla bean, white chocolate, cranberry jam eggnog mousse cheesecake. I’m bummed I put the tip in the pastry bag wrong so no pretty starry shapes lol. Oh well I tried my best.

Wow I just read Nick Carter lost another sibling to addiction. My god three sibling gone from that terrible disease. I don’t know how he and his sister have the strength to continue living life. I pray for their strength every day as this is such a tragedy.

Addiction destroys so many families (including mine). I saw first hand what it does and I can only cry for them as I know the pain they are experiencing. May they all find peace

Last bit of cranberry jam spread on top. Now off to fridge till morning

Ok it’s not jiggly in middle and top didn’t crack. Woot woot. Gonna let it cool for a bit then loosen it from sides. Then cool for an hour before I put on another layer of homemade cranberry jam. I’ll take pics of each step until it’s completed. And yes it’s a heart shaped cheesecake pan. That’s the only one I own. (I don’t normally make cheesecakes)

Morning CoSo! Merry Christmas Eve to all that celebrate. May Santa be on his way to drop off yours and the families gifts.

I baked the cheesecake this morning. Stupid me shut off timer before it went off and I pray I didn’t mess this up. I had it going on microwave and didn’t think and wanted to make a latte so I pulled the plug on microwave to plug in espresso maker and didn’t see how much longer I had left. I pray I timed this right and didn’t screw it up.
