Hiya…this question goes out to all you Grillmasters. I was going to grill red snapper and salmon fillets on a cedar plank (charcoal grill). Any tips as I never used a cedar plank before. Do I lay it right on the plank or do I wrap in parchment or foil then put on plank?

@Patti1120 oil the plank, has to be glistening, I usually don’t wrap the fish in foil if it has its skin (just put the skin side down on the plank, they are meant to be used a couple of times). I make a mean grilled salmon stuffed with crab meat on a cedar plank.
