The last few days I have been terribly ill and thank goodness I am finally feeling better. So much so that at 5 am I am restraining myself from making beef stroganoff.

Surely I can wait till lunch

Remember kids always caramelize your onions and the secret to excellent stroganoff is more mushrooms. Always more mushrooms.

So I took all those mushrooms and tossed them into the onions with more butter, garlic and thyme, caramelized those done and now I am finishing the sauce with the meat and sourcream and other lovelies!
