Pancakes aren't really a thing here--and with no real maple (or blueberry!) syrup why bother? But there's nothing quite like an arepa con queso: a big floofy mound of flour and cheese, griddle-cooked, flattened but still pillowy-soft, and drizzled with a creamy sauce. It is a cheese vehicle, somewhere between grilled sammich and pancake, and perfect for cool wet nights. ๐Ÿ˜‹

@MLClark fried stuffed tortillas are pretty popular here, not as thick as arepas, we call them pupusas

and yes, they go great on rainy evenings

Oh, I haven't had a pupusa in yeaaaaars, and even then only in a restaurant SOOOO removed from real street food that I know I didn't get the full experience. Please eat an extra on my behalf the next time you do! ๐Ÿ˜‹
